I have decided not to bottle my cider just yet, owing to the fact that it's pretty cloudy and a little too sour. Instead, I'm going to hit the brew store, pick up another pail, and rack the cider. I don't know how many times I'll repeat this process. It's simply a matter of weighing how clear I want it to be against how badly I want to drink it.

I did pour off a quart to make a small batch of applejack. They're predicting some pretty frigid overnight lows next weekend (nearly -20C) which should help to concentrate the alcohol content (and, unfortunately, the unavoidable trace amounts of fusel oils and methanol).
